One week down, thirty-some-odd to go! I wasn’t sure how I’d feel about back to school but I’m actually loving it. I enjoy the structure and the rhythm that comes with a routine. I even got myself out of bed extra early one morning to exercise before I went to work. That never happens. I’m chalking it up to my gratitude journal and my daily reading of Cyndie Spiegel’s A Year of Positive Thinking.
Taking a few minutes, every morning, to reflect on my blessings has helped me start the day in a positive head space which has made a big difference. Instead of reaching for my phone and scrolling thru Instagram to be reminded of what I don’t have and what I need to purchase, I start my day thinking about how lucky I am to be me. And then I follow that up with a daily dose of Speigel’s words which resonate so deeply:
My happiness starts and ends with me. Why is my mind blown away by this statement? I’m taping this message to my bathroom mirror and Regan and Ava’s. I hope everyone has a great week!!!

MEAL PLAN 8/21 – 8/26
Sunday, August 21st | Skinnytaste Cheeseburger Casserole | Total Time: 35 minutes | If your family loves cheeseburgers, they will be big fans of this recipe. Ground beef, rotini pasta, tomatoes, and cheese are all baked together for an easy Sunday supper.
Monday, August 22nd | Tuscan Vegetable Chicken Stew | Total Time: 55 minutes | I debated sharing this because it’s August and this is a hot soup but it’s loaded with summer veggies and perfect for a Monday night. The prep time on this one is ten minutes! If your kids will scoff, set aside some rotisserie chicken before you mix it in with the other ingredients to serve to them.
Tuesday, August 23rd | Skinnytaste Enchilada Turkey Meatloaf | Total Time: 1 hour 15 minutes | It sounds weird, I know but it’s really, really good. So moist with tons of flavor, just give this one a try! Prep time is only ten minutes!
Wednesday, August 24th | Summer Squash Basil Farro Salad with Lemony Vinaigrette | Total Time: 30 minutes | I’m a huge fan of farro – the nutty flavor is killer. If you need more protein, toss in shrimp or chicken. Double for salads this week! Meal prep: make the farro ahead of time!
Thursday, August 25th | Garlic Dijon Chicken and Brussel Sprouts | Total Time: 38 minutes | A one-pan wonder that requires very little effort. Marinate the chicken overnight for the best flavor.
Friday, August 26th | BBQ Chicken Skewer Salad | Total Time: 35 minutes | Y’all know I love to end the week with a grilling recipe. I’m not sure why this is so good because it’s SO basic – chicken in store-bought bbq sauce, grilled, and served with a simple salad. Maybe it’s the dressing!
Lunch This Week – I will double the farro salad!
