Hey guys! Sorry I didn’t put out last week (Ha – I crack myself up)! We were in Orlando for a soccer tournament with Regan’s team. It was actually really cool as it was hosted at the ESPN Wide World of Sports complex which was incredible. But if you have children who play travel soccer you know by the time you get back to the hotel room all you want to do is take a cold shower, put on pajamas, and order food. This is precisely what I did so my plans to work on the blog went right down the toilet.
The good news is I had a little time to test some recipes so this week will be the bomb.com. Yay for that!! Quick update on my gratitude journal – so, I haven’t been as consistent this past week BUT, I have been consistently reading my daily reflections from Cyndie’s book and I am really starting to see a difference. I know it sounds crazy but I am finding joy in the simplest things, things I would have noticed before but wouldn’t have elicited the gratitude I am getting from them now. I’m a work in progress but I’m a believer.
Grocery List for the Week
Herbs | basil, parsley, thyme leaves, cilantro
Fruits & Veggies | garlic, spinach, scallions, zucchini, ginger, onion, lemon, broccoli, avocado, jalapeno, romaine lettuce, bell peppers
Meat | ground chicken, ground pork, shrimp, sausage, chicken breast, beef chuck roast
Dairy | ricotta, grated parmesan, grated mozzarella, butter, buttermilk, pesto
Dry Goods | jumbo pasta shells, white or brown rice, Right Rice, quinoa, couscous
Pantry | salt, pepper, Italian seasoning, fennel seeds, jar of marinara, soy sauce, Asian chili garlic sauce, sesame oil, vegetable oil, olive oil, chili powder, chicken broth, beef stock, hot sauce, crushed red pepper flakes, flour, lemon pepper seasoning, cannellini beans, fire-roasted corn, sun-dried tomatoes in oil, chicken stock, diced tomatoes, diced green chilis, apple cider vinegar, bay leaves, cumin, oregano, paprika,
Sunday, September 11th | Easy Pasta Stuffed Shells | Total Time: 45 minutes | I’ve had this on the meal plan before but forgot how much I love it. In fact, Patrick said, and I quote, “I’ve had stuffed shells before but these are freaking good.” And they are. Good quality jarred marinara makes this come together really quickly. Get your kids to help you stuff the shells!! My girls loved it.
Monday, September 12th | Spicy Ground Beef and Zucchini Stir-Fry | Total Time: 25 minutes | I really enjoyed this dish and it wasn’t super spicy. In fact, Patrick didn’t break into a sweat and he sweats after eating foods Regan and Ava don’t think are spicy. Quick and easy, perfect for a Monday.
Tuesday, September 13th | Garlic Butter and Shrimp Quinoa | Total Time: 30 minutes | You had me at garlic butter. The shrimp are just the icing on the cake! The directions call for you to leave the shrimp tails on which is only for looks – don’t create more work for yourselves!
Wednesday, September 14th | Garlic Butter Sausages and Broccoli Skillet | Total Time: 25 minutes | This is an example of a recipe I search high and low for – family-friendly, healthy, and on the table in twenty-five minutes, start to finish. (I just realized Tues. and Wed. share two of my favorite ingredients!)
Thursday, September 15th | Pesto Chicken with Corn and Bean Salsa | Total Time: 30 minutes | I haven’t tested this recipe but I’m really, really excited to try it out. A few things – I won’t slice and pound my chicken. I will use my fool-proof method to cook the chicken because it works every time and I hate slicing and pounding chicken. This is great for families because it’s a build your own!! Your kids can eat plain chicken with a side of corn if they are picky!
Friday, September 16th | Slow Cooker Chipotle Beef Burrito Bowls | Total Time: 6 hours, 20 minutes | I made this yesterday and it was delicious. I actually cooked mine in my dutch oven on 250 for six hours because I still don’t love using my instant pot as a crock pot but I think that’s just me! I made regular rice for my kids and Cilantro Lime Right Rice for me! This is a great recipe for going into the weekend – plenty of leftovers!!
Lunch This Week – I’ve been loving these Ole Mexican Foods Xtreme Wellness High Fiber Low Carb wraps with Boars Head turkey, guacamole, lettuce, and onion. I buy the cups of Wholly Guac for ease!
