Apologies for not sharing last week. It was a doozie of a week/weekend and I honestly had zero time to do anything but life. My family ate leftover bbq from a party we hosted on Saturday ( I fell asleep on the outside couch before 9:30 surrounded by guests) and turkey sandwiches all week. Sometimes you just need super easy weeks.
If you live in Charleston you have no doubt been enjoying the last few days of fall-like weather. It’s been gorgeous here and the non-95-degree days make me want to cook all my favorite fall recipes. I was listing off all of my favorites to Patrick and he told me I needed to reign it back in since it’s going to be 85 again on Monday so I’m only going to share one fall recipe this week. Next time it dips in the 70’s I’ll share more!

Grocery List For The Week
Herbs | thyme, cilantro, oregano
Fruits & Veggies | onion, red bell peppers, scallions, garlic, brussels sprouts, red onion, zucchini, broccoli, cucumber, tomatoes, lime, chives, lemon, fresno pepper

Meal Plan 9/25 – 9/30
Sunday, September 25th | Pumpkin Risotto with Bacon and Parmesan | Total time: 1 hour | This recipe will make you forget how much you love summer and how excited you are to welcome fall. One of my favorite combos is pumpkin and bacon. Add in risotto and parmesan cheese and I’m done. Risotto isn’t difficult to make but it does take time which is why I’ve slotted this recipe for Sunday. Tip: use kitchen scissors to cut your bacon. Kid Tip: I don’t expect my girls to get as excited about a pumpkin risotto as me so I will cook additional bacon for them and do a simple bacon pasta or bacon sandwich.
Monday, September 26th | Garlic Shrimp in Coconut Milk, Tomatoes and Cilantro | Total time: 30 minutes | This Skinnytaste recipe comes together in no time, perfect for a busy Monday night. Tip: some seafood departments will peel and devein your shrimp at no extra charge – it’s worth the ask!
Tuesday, September 27th | One Pan Honey Balsamic Ground Chicken and Brussels Sprouts | Total time: 20 minutes | 20 minutes – start to finish. Talk about easy. I love the combination of sweet and tangy in this recipe. You can sub a different veggie if your family prefers – I did asparagus!
Wednesday, September 28th | Quick Sauteed Lentil Bowl with Hummus and Chili Oil | Total time: 35 minutes | I get requests to share at least one plant-based option a week but sometimes it’s hard for me to find recipes Patrick will eat and get full off of. This one fits the bill. If you haven’t cooked lentils before you need to. Cooked lentils are mixed with yummy veggies then topped over store-bought hummus and brown rice.
Thursday, September 29th | Beef and Veggie Bowls with Comeback Sauce | Total time: 30 minutes | Veggies roast in the oven while you quickly saute ground beef (or turkey) in the skillet. This is perfect for families as everything is cooked separately so each bowl can be customized! Your kids will love the comeback sauce!
Friday, September 30th | Skirt Steak with Orzo Salad and Red Pepper Sauce | Total time: 1 hour | So this might be a little more involved than you want for a Friday but it’s worth it. Pour yourself a glass of wine, turn the music up and enjoy the process!! The red pepper sauce is delicious on everything!!
