I hope everyone who ended up in the path of Hurricane Ian is safe and sound. My heart is broken for those in Florida traveling back home today hoping and praying they still have a home to go home to. My crew is totally OK – we have a few branches down and the yard is a mess but nothing we can’t manage. I know there are still a good number of people in the Charleston area without power – we were lucky and our power stayed on the entire duration of the storm, much to Ava’s dismay. That child prayed hard for the power to go out even though she would have been the first to complain about being hot!!
The one positive of a storm in my neighborhood is the cooking. Each family takes a night and hosts the rest of the crew. So far, we’ve had linguine with scallops and greek chicken with potatoes. Tonight is our turn and Patrick is cooking Frogmore stew with a bit of a twist. I think I’m going to make my favorite whipped feta with roasted tomatoes app and maybe this super cute Halloween charcuterie board if I have time!

Sunday, October 2nd | Herbed Farro Risotto with Crispy Shallots and Flank Steak | Total Time: 60 minutes | This is my second risotto recipe in two weeks but this one is the complete opposite of the pumpkin risotto from last week. The nuttiness of the farro paired with fresh oregano, lots of parmesan, and crispy shallots make this one restaurant worthy. Serve with a simple flank steak!
Monday, October 3rd | Grilled Salmon Salad with Creamy Cilantro Lime Dressing | Total Time: 30 minutes | Such a great Monday re-set recipe. If you grill the flank steak on Sunday, go ahead and grill your salmon too – makes for a super easy Monday night!
Tuesday, October 4th | White Bean Turkey Chili | Total Time: 1 hour ten minutes | It’s time – October is here which means we can finally start cooking some of our favorite soups & stews. This lightened-up chili is made with pureed white beans, ground turkey, and spices. The perfect recipe to welcome in fall. Slow cooker and instant pot options are available.
Wednesday, October 5th | BBQ Ranch Chicken Quinoa Bowls | Total Time: 3 hours 15 minutes | If you are looking for an easy family-friendly & healthy weeknight recipe, this is it. Chicken breasts cook in the slow cooker with your bbq sauce of choice. Bowls can be customized for each person in your home.
Thursday, October 6th | Creamy Butternut Squash Butter Chicken | Total Time: 45 minutes | Don’t knock it ’till you try it!!! A super cozy spin on traditional butter chicken, this will become a new favorite in your house. Serve with rice and naan (flat bread)!
Friday, October 7th | BLT Salad Flatbread | Total Time: 30 minutes | A fun spin on your traditional BLT, grilled chicken, bacon, tomatoes, corn, low-fat blue cheese, and a yummy dressing are all piled atop a yummy pita! Another customizable option for your fam!
