I blinked and it was October. How did that happen? A hurricane weekend followed by a weekend out of town for Ava’s soccer tournament threw me for a loop. I usually have Halloween decorations up by the last day of September but this year, until Thursday, there was not a pumpkin in sight at the Duffy house. Maybe this week will be the week I finally get my life in order. Don’t hold your breath!
I’m trying to get this week’s plan out to you before it gets too late so I will not be sharing a grocery list today. I’ll try my best to get one out tomorrow AM!
Meal Plan 10/16 – 10/21
Sunday, October 16th | Slow Cooker White Wine Chicken Stew | Total Time: 7 hours, 30 minutes | I saw a meme the other day about Charleston’s weather – winter in the AM, spring at lunch, summer at 3:00 then fall at sundown. It’s funny because it’s true. As long as you plan to eat this after the sun sets, you’ll be alright.
Monday, October 17th | Easy Mexican Chicken Quinoa Casserole | Total Time: 1 hour 25 minutes | An hour of the “total time” is cook time so don’t fret. This would be really yummy over chopped romaine the next day for lunch!
Tuesday, October 18th | Shrimp, Peas and Rice | Total Time: 30 minutes | Ridiculously easy recipe here folks. Simmer brown rice and peas together then toss in cooked shrimp. Top with cheese. That’s literally it!
Wednesday, October 19th | Low-Carb, High Protein Chicken Pepper Jack Crunch Wrap | Total Time: 8 minutes | Dinner doesn’t have to be fancy to be delicious. Recipes like this one are great for families because of the customization – your kids can make their wrap, their way. Serve with a side of roasted potatoes!
Thursday, October 20th | Ground Turkey Butternut Squash Skillet | Total Time: 30 minutes | A one-pot wonder here y’all. Ground turkey cooked with hearty squash, bell peppers, onions, smoked paprika and topped with Gruyere cheese ready in 30 minutes!
Friday, October 21st | Warm Farro Salad with Burrata and Hot Honey Viniagrette | Total Time: 45 minutes | My name is Kelly and I have a farro obsession. Oh and a burrata and hot honey obsession. I might just make this for myself and let my family eat pizza. You should too!!!
