This past week was a bit of a doozy – work is insane so I pulled a lot of late nights and oh yeah, Regan ended up in the ER after a basketball injury!! She’s fine, nothing a little pain medication can’t handle but Lord have mercy my brain is fried and I’m pretty sure I’m down a few lives. I don’t remember what day it was but at some point, Regan and I decided to treat ourselves to lunch out and ended up at a new spot on James Island, the Coastal Snack Bar!
For you locals, Coastal Snack Bar is located on the corner of Harbor View and Fort Johnson road. It’s been a number of restaurants, too many to name, but none of the previous compares to the fresh and eclectic menu now offered at this family-friendly neighborhood spot. Regan ordered the fried chicken sandwich with fries and I had the Caesar salad with warmed chicken. (Yep, you can choose between warmed or chilled chicken!) Regan might just be a restaurant’s harshest critic so as I watched her gobble the fried chicken sandwich so quickly that I didn’t have a chance to get a bite, I knew I could be confident making the statement this place is solid and here to stay. I love their spin on the Caesar salad opting to chop the romaine and use crispy breadcrumbs in place of large chunks of soggy bread. The dressing was out of this world and the warmed chicken was the icing on the cake.
We ended our meal with the yummiest soft serve topped with sprinkles and an assortment of candies and walked away feeling like Coastal Snack Bar had been a part of the fabric of James Island forever. If you find yourself on the island, definitely make a beeline for this funky new spot that has something for everyone.

Sunday, January 22nd | The BEST Turkey Meatloaf | Total Time: 1 hour | If you’ve been here a while you know Ava Duffy begs me to make this recipe at least once a week but it has to cook a little longer than I like for a weeknight so it’s the perfect Sunday supper recipe. Using ground turkey not only lightens up this recipe but it also adds so much moisture! Once you opt for a turkey meatloaf, you will never go back!!!!
Monday, January 23rd | Sheet Pan Hamburger Steak with Mushrooms and Onions | Total Time: 30 minutes | A fun twist on an old classic, this sheet pan hamburger steak recipe comes together quickly and will be tolerated by everyone in your house! Serve with a side of microwavable green beans and you are done!
Tuesday, January 24th | Turkey Enchilada Skillet | Total Time: 20 minutes | This one had me at 20 minutes plus it’s a one-pan wonder here, which y’all know I love for easy clean-up. Kid Tip: the meat browns before you add the other stuff so you could always pull some out and put it into a taco shell for your picky eaters!
Wednesday, January 25th | Sheet Pan Tomato and Artichoke Chicken | Total Time: 30 minutes | Don’t sleep on this recipe! It’s short on ingredients but BIG on flavor. You literally open a few cans, pour their contents onto a sheet pan, and bake.
Thursday, January 26th | Honey Sesame Chicken Stir-Fry | Total Time 35 minutes | Here is another great option for families as you can serve the chicken plain, or with the sauce, minus the veggies. This is also really adaptable so use whatever veggies or protein you have on hand!
Friday, January 27th | Easy Hamburger Vegetable Soup | Total Time: 1 hour | I might have lived off of Campbell’s vegetable soup when I was a kid and still sneak a can or two into my cart when I find myself in a grocery store. More of a stew than a soup this “stick to your ribs kind of dinner” full of veggies and flavor.
