Following a weekly meal plan is the best way to cook healthier for your family, and save time and money! Each week I share six simple, healthy, and family-friendly recipes to help you simplify feeding your family.
Between basketball, work, basketball, work, and managing teenagers, I’m short on time but don’t let my lack of blab keep you from cooking from this week’s meal plan. It’s a great one, full of variety. I’m also sharing a few of my favorite super bowl apps and, some elevated valentine’s recipes if you prefer to stay in and cook like me!!
Meal Plan 2/12 – 2/17
Sunday, February 12th | Super Bowl App Ideas | I love football but the Super Bowl isn’t my jam, however, I do love the food and friends that come with this Sunday celebration. If you are looking for a crowd-pleasing app, I have you covered.
Monday, February 13th | Greek Marinated Shrimp with Lemon-Dill Sauce | Total Time: 50 minutes ( 30 minutes is for marinating) I made this recipe last week, which is so freaking good. The spice marinade comes together really quickly as does the lemon-dill sauce. I opted not to use skewers and saute the shrimp and veggies. Healthy and easy, perfect for a Monday.
Tuesday, February 14th | Valentine’s Day | I’m a stay-in and cook-at-home Valentine’s Day gal. Most years, Patrick and I incorporate the girls into our v-day plans and cook their favorite dishes – heart-shaped grilled cheeses, fondue – anything to get them to hang out with us. Check out my Valentine’s Day recipe post if you want fancier ideas!
Wednesday, February 15th | Roasted Peruvian Chicken | Total Time: 50 minutes | I’m not sure what makes Peruvian food Peruvian but I know I love the mix of garlic, cilantro, soy, and spices in this simple baked chicken dish. Double the green sauce to use as a dressing! You will need to marinate the chicken for at least thirty minutes. Serve with your favorite veggies.
Thursday, February 16th | 5 Ingredient Chicken Sausage and Orzo Skillet | Total Time: 20 minutes | 5 ingredients, ready in twenty minutes AND you can deconstruct this one for picky eaters!
Friday, February 17th | Sesame-Ginger Beef | Total Time: 20 minutes | Order pizza for the kids then make this umami-packed sauce filled with sesame, ginger, and soy. You will not regret it!
Lunch This Week: Moroccan Spiced Salmon with Lemon Yogurt Sauce
