Ingredients
- 2 cups rotisserie chicken
- 1/2 cup Frank's red hot buffalo wing sauce extra for serving
- 1 cup quinoa
- 2 cups low sodium chicken broth
Toppings
- non-fat greek yogurt
- chopped green onions
- salt & pepper to taste
Instructions
- Cook quinoa according to directions, in chicken broth. Set aside
- Once the quinoa has absorbed the broth, mix in shredded chicken and hot sauce.
- Top with greek yogurt and green onions. Serve as is, or over arugula.
