Over the past four years, I’ve learned the hard way how expensive, and unhealthy, eating out for lunch can be. So, I tackle lunch like I tackle dinner – I make a plan. Every Sunday I think about what type of salad I’d like to eat for the upcoming week and then I meal prep my choice that same day. This way I have all of the ingredients ready to pack on Monday morning and no excuses not to eat healthy. That being said, I just can’t do boring salads. Below are my favorite, flavorful and healthy, salads that will have you looking forward to lunch time and keep you full until your next meal.
Hamburger Salad with “Big Mac” Sauce – I have tried a similar hamburger salad recipe but to be honest, Thyme & Joy’s is the best on the market. Make the meat mixture and sauce on Sunday. It’s flipping delicious.
Buffalo Chicken Quinoa Salad – No fuss & simple, this spicy quinoa mixture will keep you full and satisfied.
Arugula Chickpea Salad – Be bold & daring and loose the chicken or turkey and opt for chickpeas one week. The low calorie guac makes this one.
Spicy Paleo Tuna Salad – They had me at pickled jalapenos. Done with lettuce? Roll this one up in a low carb wrap.
Lemon Roasted Salmon Salad – Spoil yourself and go for the salmon. Two decent size pieces should last you all week.
Tuna and White Bean Salad – Ready in less than five minutes – perfect for when you don’t have a lot of time to meal prep on Sunday.
Healthy Avocado Chicken Salad – You could put avocado on just about anything and I’d eat it!
Macaroni Salad with Tomatoes and Zucchini – For when you are really craving pasta but not the calories. Toss in shrimp, chicken or your favorite protein!
Southwest Quinoa Salad – Because quinoa is a complete protein, it packs a major punch and will keep you as full as chicken, chickpeas or fish. The lime vinaigrette is to die for.
