I hope all of you had a wonderful Thanksgiving holiday spent eating scrumptious food with friends and family. I certainly did which is why I need a serious food re-set. All of this weeks meal plan choices are super low in calories, even my Sunday supper recipe. I’m also including my insanely delicious Sea To Table Dijon & Dill Salmon recipe ~ more on that later this week!!
Sunday, December 1st – Okra Soup with Shrimp: This southern dish takes me way back. Loaded with veggies, shrimp and fluffy white rice, this recipe gets a bit of an update by adding ginger and lemon. If you don’t have time to make shrimp stock, just use chicken stock or a white wine/water mixture!
Monday, December 2nd – Dijon & Dill Salmon: Only a few ingredients but with seafood this fresh, you don’t need a whole lot. This recipe is a show stopper y’all – make this for guests or just treat your family mid-week! Roast some asparagus at the same temp for the same amount of time as the fish! A Duffy family favorite right here!!
Sea To Table Dijon & Dill Salmon Recipe
Ingredients
- 1 lb fresh salmon
- 1/4 cup good dijon mustard
- 1 tbsp fresh parsley
- 1 tbsp fresh dill
- 1 tbsp fresh lemon juice
- 2 garlic cloves
- 1 tbsp olive oil
- salt and pepper
Instructions
- Pre-heat the oven to 375. Spray a baking sheet with non-stick spray.
- Pat the salmon dry. Lightly season with salt & pepper. Spread the dijon mustard over each piece of salmon. I coat well.
- In a small bowl, combine the chopped parsley, dill, fresh lemon juice, olive oil and minced garlic cloves. Top each piece of salmon with the herb mixture.
- Bake for 10 – 12 minutes or until salmon is perfectly pink and flaky.
Tuesday, December 3rd – Taco Cauliflower Skillet: I will purchase frozen cauliflower from Trader Joe’s. So much going on in this one your kids will never know it’s not white rice.
Wednesday, December 4th – Skinnytaste Pork Chops with Roasted Carrots: Skinny or not, these are my very favorite pork chops. Perfectly moist and tender. Make these garlic parmesan roasted carrots and call it a day!
Thursday, December 5th – Sausage, Pepper & Cauliflower Fried Rice – Not sure about your kids but mine love sausage. Yes, they will pick around the peppers but at some point they will end up ingesting a few accidentally! Again, I will sub frozen cauli rice for the homemade stuff. Feel free to use brown rice or whatever floats your boat.
Friday, December 6th – Turkey Stuffed Peppers: Sometimes stuffed peppers can take forever to put together but not these guys. Really easy to prep and clean up is even easier!
