When I come across a product or a company I love I get giddy at the thought of sharing my find with all of you and this one may just be my favorite one yet! (Doesn’t hurt that it makes an awesome holiday gift) I’m super excited to fill y’all in on my new found devotion for Sea To Table, a seafood home delivery service. Sea To Table sources fresh seafood from fisheries coast to coast – from port towns to coastal villages – all over the USA. With the help of owner Sean Dimin, I decided to order the Alaskan Home Pack which includes the following: Coho Salmon, Sockeye Salmon, Halibut and Pacific Cod. Living on the east coast, I do have the opportunity to eat locally sourced, Atlantic, seafood but rarely am I able to get my hands on fresh west coast fish.
My box of fish arrived in eco-friendly packaging with plenty of dry ice. Each variety of fish was clearly labeled and individually wrapped – all I had to do was move it from the box to the freezer. The labeling is incredibly helpful – each packet gives instruction on how to properly defrost, prep and cook the fish. Not only that, you get the traceability information – what boat the fish was caught on, on what day and at what time.
I immediately wanted to cook this farm to table fish so I pulled out a packet of coho salmon. Y’all the color of this salmon – the perfect shade of orange. There was no fishy smell which is how I can tell when seafood is actually fresh. I decided a little Dijon mustard, fresh dill, lemon and garlic would make for the perfect recipe.
Sea To Table Dijon & Dill Salmon Recipe
Ingredients
- 1 lb fresh salmon
- 1/4 cup good dijon mustard
- 1 tbsp fresh parsley
- 1 tbsp fresh dill
- 1 tbsp fresh lemon juice
- 2 garlic cloves
- 1 tbsp olive oil
- salt and pepper
Instructions
- Pre-heat the oven to 375. Spray a baking sheet with non-stick spray.
- Pat the salmon dry. Lightly season with salt & pepper. Spread the dijon mustard over each piece of salmon. I coat well.
- In a small bowl, combine the chopped parsley, dill, fresh lemon juice, olive oil and minced garlic cloves. Top each piece of salmon with the herb mixture.
- Bake for 10 – 12 minutes or until salmon is perfectly pink and flaky.
