The girls and I have been getting creative this past week trying to keep ourselves entertained. We decorated Easter cookies, did side walk chalk drawings, had an outdoor dance party – we even “egged” our friends house! No, we didn’t literally throw eggs – we hid candy filled Easter eggs in their yard while they were simultaneously, and without the kids knowing, hiding Easter eggs in ours. Sly social distancing for the win.
I’ve been trying to fill my time doing useful things but I can’t really point to anything I’ve actually done aside from exercising, cooking, eating and drinking. Those seem to be activities I’ve become really great at. And bike riding. My neighbors and I have started a nightly happy hour bike ride gang. We explore new neighborhoods and even grab to-go peach Bellini’s from our favorite local bar! Not to worry – we ride six feet apart!
I’m really looking forward to cooking, and eating, this week’s meal plan. Hoping the weather is nice so we can eat outside! Once again I’m focusing on easy family options and recipes you can make in bulk. I know so many of you have additional family members under your roofs right now and you are feeding more mouths than you are used to feeding. The below are perfect for large families! Monday, April 13th // Shrimp Scampi Pasta with Zucchini Noodles // I love how this recipe calls for a mixture of zucchini noodles and whole wheat noodles. Sometimes when it’s just the zucchini, the dish feels as if there isn’t enough bulk. The mixture of both makes this one hearty & healthy. Hopefully shrimp aren’t hard to find in your local grocer. If they are, sub scallops, chicken – whatever you can get your hands on. This is a really universal dish.
Tuesday, April 14th // One Pot Moroccan Quinoa // A vegan option you can personalize! I will probably throw in some white fish we have in the freezer but you can do any seafood, chicken or steak.
Wednesday, April 15th // Hawaiian Chicken with Coconut Rice // If you have a grill, and you know how to use it, definitely cook this chicken and pineapple over flames. Better still, you marinate the chicken and have your partner do the grilling. The flavor is out of this world. Such a treat. My girls LOVE this recipe.
Thursday, April 16th // Oven Baked BBQ Chicken with Kale & Brussel Sprout Salad // I know, chicken two nights in a row but trust me, it’s worth it. Another family friendly, healthy & simple week night dish. Don’t not make the salad because you don’t like kale, or brussel sprouts. Once these two are finely chopped and mixed with all of the yumminess you will never know it’s not lettuce. Brussel Sprout Recipe
Friday, April 17th // Turkey Meatloaf // Skinnytaste does it again. This lean meatloaf is my all time favorite. It’s never dry and the flavors are on point. I’m going to make two and freeze one for a weeknight meal in a pinch.
