Re-sharing an oldie but goodie meal plan this week (which I’ve never done) because my crew and I are heading north for a few days and I won’t be here to cook alongside you guys. The below plan is one of my favorites so it’s definitely worthy of a re-share.
Sunday, June 7th | Skinnytaste Chicken Parmesan Lasagna | I’m not quite sure how @skinnytaste comes up with these cheesy, mouth watering and low calorie recipes but Lord I’m grateful. A family favorite in my house!
Monday, June 8th | Creamy Coconut Lime Salmon| Lots of flavor and super easy, y’all. I will sub light coconut milk and serve over jasmine rice. Add in some sautéed peppers, and snap peas for more bulk.
Tuesday, June 9th | Grilled Chicken Skewers | I find skewers to be a waste of time but this recipe uses a pretty awesome hack that may make it worth your while – peeled plum, CANNED, tomatoes. Just pick them out of the can, thread them onto the stick along with some chicken. And that’s pretty much it. Serve with roasted asparagus or side salad. Kid Tip – keep their chicken plain if they baulk at flavor!
Wednesday, June 10th | Billy’s Oven Baked Pork Butt | I love bbq but cooking a butt usually takes tons of time, energy and requires an outside smoker. Thankfully my friend figured out a way to get melt in your mouth bbq, straight from your oven. Serve with fresh corn!
Thursday, June 11th | Skinnytaste Inside Out Turkey Cheeseburgers with Cucumber, Tomato Salad | I promise these turkey burgers are so good you won’t want a bun. Serve with this tangy cucumber & tomato salad for the perfect summer dinner!
Friday, June 12th | Creamy Pesto Risotto with Roasted Cherry Tomatoes & Spiced Chickpeas | I have a love affair with risotto. And roasted cherry tomatoes. Add in store bought pesto and I’m officially in heaven. Simple instant pot risotto tutorial included. ( I’m not vegan so I will sub regular pesto & parmesan)
