BBQ – I don’t care if you are from the south, west, north or east – everyone loves some melt in your mouth Q. But cooking a butt can be a pain in the, well, butt. Thankfully my friend Billy is a rock-star in the kitchen and came up with this super simple, four hour, oven baked favorite. Make this over the weekend, portion out what you will need for the week, and freeze the rest in dinner sized Ziploc freezer bags. You can pull out a bag in a pinch. And think outside the box for how to incorporate into your meal plan – tacos, over salad, naan pizzas, spring rolls, bbq mac n’ cheese – you can do so much more than just sammies!
Billy’s Oven Baked Pork Butt
Ingredients
- 4 – 5 lb boston butt
- 1/4 cup paprika
- 1/4 cup garlic powder
- 1/4 cup brown sugar
- 3 tbsp salt
- 1 tbsp pepper
- 1 cup apple cider vinegar
- 1/2 cup worcestershire
Instructions
- Pre-heat oven to 300 degrees. Score the butt by making shallow cuts about 1/4 inch deep. ( This allows for better absorption of marinade/rub)
- Mix paprika, salt, pepper, garlic powder and sugar together. Rub over entire surface of pork. Place butt into a large Dutch oven, with lid.
- Pour apple cider and worcestershire over butt.
- Into the oven it goes, covered, at 300 degrees for 3 hours. After 3 hours, remove top and place back in oven for an additional hour but up temp to 350 for last hour of cooking.
