What an exciting weekend full of fireworks, amazing food and fun! We kicked ours off on Friday, inviting a few of Regan and Ava’s friends over to celebrate with a creek float and cookout. I can’t tell you how wonderful it was to hear all of the gal pal giggling after so many months of solitude! Both of my girls seem so much happier after spending some quality time with a few of their friends.
After a full Friday of cooking, decorating and entertaining I decided it would be a good idea to take it a little easier on the 4th. We picked up sammies from Mozzo and headed to the park. It was pretty quiet as most people were on the beach or boat so we found a nice shaded spot, under a gorgeous oak, and set up camp. The girls played on the playground while Patrick and I listened to music and just relaxed. P.S. – the tablecloth above is also featured below as a picnic blanket! Snag it here for only $25! I totally took advantage of the weekend and put my keto diet on major pause – potato salad, mac n’cheese, Butterfinger pie – if it had a carb, I ate it and enjoyed the heck out of it. As I sit here, staring down Monday, I am extremely aware it’s now time to re-focus and get back on track. Enter this week’s meal plan – lots of variety and flavor to keep your taste buds and waistline happy!
Sunday, July 5th | Skinnytaste Meatloaf | Ava has been begging me to make this meatloaf recipe for weeks – it really is that good. To make it Keto friendly – sub soy sauce for Worcestershire and almond flour for breadcrumbs.
Monday, July 6th | Salmon Cakes with Arugula Salad | One of my favorite simple weeknight dinner recipes. I like to patty the cakes about an hour before dinner so they have time to firm up. To make these Keto friendly – sub almond flour for panko!
Tuesday, July 7th | Philly Cheesesteak Casserole | I have a feeling this will become one of my family’s new weeknight favorites. Using ground beef instead of steak helps to keep it budget friendly too!
Wednesday, July 8th | Low Carb Mississippi Chicken Thighs | Maybe I’m losing my mind but these chicken thighs look insane. Cooked with pepperoncini peppers and a little ranch dressing, that soaks into the skin, these must be the most flavorful chicken thighs on the planet. Make sure to use skin on thighs. Serve with green beans or if non-keto, oven roasted potatoes would be perfect.
Thursday, July 9th | Chicken Gyro Bowl | Pretty much a you do you recipe here with a great Greek chicken marinade. If non keto, add a healthy grain to make it even more filling. Tzatziki is pretty low carb so you should be OK with most store bought varieties.
Friday, July 10th | 15 Minute Garlic Butter Chicken with Parmesan Cauliflower Rice | Crispy butter chicken your kids will go crazy for. You can sub cooked rice, couscous or any other grain for the cauliflower rice. If you stick with cauliflower do yourself a favor and purchase the frozen stuff.
