I hope everyone is getting lots of R&R this holiday weekend! My clan kicked off our Labor Day festivities by hosting an easy pizza bar grilling party that was enjoyed by all – kids and parents alike! I love when guests can contribute to the cooking process – it makes for such a fun evening!
After two weeks of having the kids back in school we are finally accepting of the fact our carefree summer vibes have come to an end. This week brings new challenges with sports practices firing back up. I feel as if it’s so easy to begin neglecting ones health and mental well being in the fall because of everyone’s hectic schedules – work, school, homework, practice, dinner, bath and bed – the never-ending story of our lives. While I can’t make your stress disappear, I can help you plan your weekly meals which will ABSOLUTELY free up more time for you to pay attention to you and take away the stress that stems from the dreaded “what’s for dinner” question!!
Meal Plan 9/6 – 9/11
Sunday, September 6th | Amazing Beef Enchiladas | I’m such a fan of Natalie’s cooking and have been dying to try her enchiladas. Mexican for Sunday supper is pretty much the perfect ending to a weekend.
Monday, September 7th | Caprese Chicken Skillet | If I had to pick a favorite flavor combo it would be tomato, mozzarella and balsamic vinegar. I could eat these three things every, single day. Add in chicken and basil and I’m in heaven. A few tips – feel free to sub good quality canned diced tomatoes and use chicken tenderloins for faster cooking. KETO TIP – omit honey. KID TIP – deconstruct it! Serve a few pieces of cooked, plain, chicken with a side caprese salad and their favorite dippy sauce.
Tuesday, September 8th | Basil Chicken in Coconut Sauce | There are quite a few spice requirements for this recipe but honestly, if you’ve been following my meal plans chances are you own most, if not all of them. KETO TIP – Serve over zucchini noodles and sub coconut aminos for Worcestershire.
Wednesday, September 9th | Pepper Steak Stir-Fry | When I hear stir-fry I think quick & easy dinner option and this one doesn’t disappoint. KID TIP – My girls like the flavors but don’t like everything mixed together. I set aside cooked steak for them before mixing with peppers and serve with a side of rice! KETO TIP – sub keto friendly ingredients for soy and sugar.
Thursday, September 10th | Coq au Chardonnay | AKA chicken and veggies cooked in white wine – don’t let the fancy French description fool you! A few things – I will not be purchasing a whole chicken. Instead I will buy a mix of bone in, skin on thighs and a few chicken breasts. For faster cook time, bake your bacon – 425 for about 15 minutes.
Friday, September 11th | Upside Down Pizza Casserole | For all of my keto peeps. If you aren’t keto you should still totally make this recipe. I’m so serious when I say almond flour is my new favorite find!!
