I’ve been dying to share this week’s meal plan with you; not so much for the recipes (they are great, of course) but because it incorporates a giveaway with one of my favorites, Jason Lewis of Dinner on Dad. He and I have been trying to figure out a way to collaborate for months and we finally found the time and space to make it happen.

This is why I’m sharing six of my favorite slow cooker recipes so if you win this incredible appliance you will have plenty of recipes to choose from.
In order for slow cooker meals to actually make your life easier, you really need to plan ahead. For example, I don’t have a whole lot of extra time in the mornings so waking up early to spend even as little as ten minutes, chopping and measuring, is going to stress me out. Instead, I prep the recipes the night before which works well because I’m not actively cooking dinner – the crock pot is doing it for me. The next morning all I have to do is dump the ingredients into the slow cooker, set it and forget it. One of my favorite feelings is walking into the door, after a long day at work, and remembering dinner is already cooked!

SLOW COOKER MEAL PLAN
Sunday, October 11th | Slow Cooker Beef Ragu | Tender flank steak, cooked all day in tomatoes and spices, comes out tender and full of flavor. Serve over some Pappardelle (or any thick noodle) to soak up every last morsel!
Monday, October 12th | Greek Gyro Chicken | I created this recipe with my family in mind because it allows you to serve it in so many different ways satisfying everyone in your family – wrapped in a pita, over lettuce, heck even in a taco shell. The options are endless. MEAL PREP TIP – juice the lemon, cut the onion and garlic the night before for a seriously stress free Monday!
Tuesday, October 13th | Hamburger Soup | I’ve been dying to share a soup recipe with y’all. I love soups. Love them. Mostly because soup recipes make a ton which means lunch leftovers for days! A few thoughts – this recipe calls for using frozen mixed veggies which is totally fine but feel free to chop your own potatoes, carrots etc. especially if you know your kids will eat one over the other. MEAL PREP TIP – brown the meat mixture the night before and if you are not using frozen veggies, cut those the night before as well. If using potatoes, soak them in water in the fridge overnight so they don’t turn brown!
Wednesday, October 14th | Crock Pot Chicken Legs | Not sure about yours but my kids love chicken legs. If I’m being honest, I do too. There’s just something fun about the way you eat them. Serve with a side salad or roasted new potatoes.
Thursday, October 15th | Crock Pot Low Carb Taco Casserole | A perfect low carb weeknight recipe. Kids can top theirs with Fritos for added crunch and fun! MEAL PREP TIP – make the meat mixture the night before!
Friday, October 16th | Asian Pork Tenderloin with Ginger Glaze | Closing out the week with a bang. This recipe is SO good. And it’s sweet so your kids will love it! Serve over rice or as is!
