Pinching myself because my first submission as a Lowcountry Parent Magazine contributor went live a few days ago!! This feels like such a huge accomplishment for me because if I’m being honest I really struggle to find confidence in my writing. I am much more comfortable as a “blogger” than an actual “writer” because writing does not come naturally to me and I wrestle with it on the daily. But at the same time I know I have a lot of interesting and possibly important things to say. Trying to find the balance between the two – my insecurity in my writing and the confidence in my ideas – is something I really need to work on.
When Lowcountry Parent asked me how I thought I could contribute to their mag, I immediately knew my focus would be on the tween years. There is just not enough support for parents of tweens. The market is flooded with how-to’s and best practices for babies, toddlers, and elementary school kids but as soon as your littles become middle schoolers, all of the experts are out. This is insane to me because so much happens in a child’s life during this time. This is exactly why my first submission is all about the period; not the medical side but the innovative products that are now available to help your daughter thrive during this time. Lastly, and this has nothing to do with Lowcountry Mag, but did any of you make the Chicken Ceasar Pasta Salad from last week? Holy deliciousness. This is one of those holy grail recipes you need to pin onto the inside of your cabinet until it becomes permanently seared in your brain. I’m kind of surprised it hasn’t gone viral. We didn’t have time to cook the bacon and it was still incredible. Perfect for meal prep, weekday lunches, or a quick family dinner.
Meal Plan 10/10 – 10/15
Sunday, October 10th | Spicy Pesto, Asparagus and Ricotta Pasta with Crispy Prosciutto | Total Time: 30 minutes | First things first – you can omit the jalapeno and make this family-friendly. I’m obsessed with the flavor combo of ricotta and lemon and adding crispy prosciutto just makes this one heavenly in my book. KID TIP: Serve your kiddos bacon pasta – cook the pasta and prior to tossing with the ricotta mix, pull out a handful and leave plain. Top with parmesan and crispy prosciutto aka bacon.
Monday, October 11th | Slow Cooker Chicken Pot Pie | Total Time: 8 hours 10 minutes | It’s been a hot minute since I’ve shared a crocker recipe and this one jumped out at me for good reason. All of the comfort of traditional chicken pot pie just minus the crust and labor. I prefer to share crockpot recipes on Mondays so you can use Sunday to prep the ingredients.
Tuesday, October 12th | Sheet Pan BBQ Chicken Dinner | Total Time: 40 minutes | Ten minutes of prep time and one sheet pan = a really great weeknight option. Plus, not sure about your kids but mine tolerate bbq chicken really well. Cook chicken, corn on the cob, potatoes, red bell pepper, zucchini, and onion together for a something for everyone style dinner. TIP: Use two sheet pans to avoid overcrowding the pan – you want your veggies crispy, not soggy.
Wednesday, October 13th | Steak Bites with Miso Ginger Dressing | Total Time: 35 minutes | Miso is a Japanese seasoning that has a deep, toasty, salty & sweet flavor that makes everything so much better. This recipe is incredibly easy AND can be adapted for your picky eaters. Oh, and it’s pretty healthy. KID TIP: Serve steak tips with a side of rice (miso dipping sauce on the side) and some veggies!
Thursday, October 14th | Ava’s Favorite Chicken Burgers | Total Time: 25 minutes | In my house, Ava’s chicken burgers reign supreme. These things are jam up and really easy to throw together. If you have time, place formed chicken patties into the fridge for about 15 minutes to set. Make sure your pan is hot before you add patties so they are less likely to stick!
Friday, October 15th | Roasted Veggie Pasta with Feta | Total Time: 25 minutes | Last Friday’s easy pasta recipe has me craving well, easy pasta recipes and this one fits the bill. Flavorful roasted veggies tossed with a block of feta, lemon juice and arugula. KID TIP: serve plain pasta with a side of veggies or pour your favorite marinara on top!
