Following a weekly meal plan is the best way to cook healthier for your family, and save time and money. Each week I share six easy, healthy, and family-friendly recipes to help you simplify feeding your family!
Happy Father’s Day to all of the Dad’s, Step-Dad’s, Grand-Dad’s, Uncles, Brothers, Cousins, Pet Dad’s and Friends who step up and show us what it truly means to be a Father. I am most thankful for my daddy-o who brought so much love, acceptance, and joy into my life for thirty-four years. I miss his tight hugs every, single day.

Meal Plan 6/19 – 6/24
Sunday, June 19th | Billy’s Oven Baked Pork Butt | Total Time: 4 hours | I know bbq is way better when smoked for hours and hours on end but this oven version is pretty freaking awesome and it requires less time and energy! Both Patrick and my father-in-law love some “q” so I’ll treat them to this juicy pork served with some of my favorite summer sides – cucumber & tomato salad, the best-baked potato salad, and grilled corn on the cob!
Monday, June 20th | Curried Chicken Salad | Total Time: 10 minutes | A friend of mine was recently chatting about the best-curried chicken salad and now I can’t stop dreaming about curried chicken salad. Plus, I love making sammies for supper! Serve with leftover sides from Sunday!
Tuesday, June 21st | Pulled Pork Salad | Total Time: 15 minutes | Put that leftover bbq from Sunday to use in this yummy pork salad! Tender bbq mixed with corn, avocado, cilantro, and crunchy bell pepper.
Wednesday, June 22nd | Lebanese Chicken with 7-Spice | Total Time: 50 minutes | The flavors in this simple chicken recipe are out of this world. Lebanese 7-spice is a mixture of cumin, allspice, cinnamon, cardamom, nutmeg, coriander, and ground cloves. You can make your own 7-spice (you will want to put it on everything) or you might be able to find it in your local grocer.
Thursday, June 23rd | Creamy Pepperoncini Chicken Tender Skillet | Total Time: 30 minutes | Creamy, hearty, and tangy – this flavor combo will be your family’s new favorite!!
Friday, June 24th | Prosciutto Arugula Burrata Pizza | Total Time: 30 minutes | I can’t quit the burrata and balsamic flavor combo. I will purchase pre-made pizza dough and continue the recipe from there!
