For the Duffy family, this past week was full of dr.’s appointments, sports, school closures and really cold weather. I honestly can’t even remember last Monday – it’s all such a blur. I’ve been trying to fit in exercise where I can which means I start cooking a little later which means I’m too tired to take pictures! But I promise I’ve been cooking and eating along with the meal plan.
My favorites from last week – Sausage & Peppers with Zucchini ( I cheated and used jarred tomato sauce) and the Honey Mustard Chicken recipe. We had leftovers from both which made work lunches really quick and easy!
A few tips for this week: – Plan ahead!! Online grocery shopping is at full volume so plan accordingly. Use your sticky notes – place a sticky note on the inside of a cabinet so your family can write down grocery needs for the week!
Meal Plan 1/23 – 1/28
Sunday, January 23rd | Creamy Sausage Soup | Total Time: 55 minutes | I’m not sure there is anything more comforting than a big ‘ole bowl of potato soup. I love the addition of sausage in this recipe as it adds a little more bulk and flavor.
Monday, January 24th | Instant Pot Ribs with Roasted Potatoes and a Side Salad | Total Time: 50 minutes | My girls absolutely LOVE when I make these instant pot ribs. To be honest, I totally forget this is an option until HT puts them on sale. Serve with a simple side salad and some roasted potatoes for a yummy Monday supper!
Tuesday, January 25th | Sheet Pan Salsa Verde Chicken | Total Time: 1 hour | This a la carte recipe gives everyone in your family the option to customize their dinner, and since it’s a sheet pan it’s hands-off and super easy to clean up. Meal Prep: Double the chicken and veggies for lunch salads for the week. Short on time – just purchase pre-made salsa verde!
Wednesday, January 26th | One Pan Baked Lemon Chicken and Artichokes | Total Time: 30 minutes | Another sheet pan recipe to make weeknight cooking healthy & simple! Canned artichokes and chicken topped with a lemony, butter, and honey sauce. Your kids will love the sweetness of the chicken even if they won’t eat the artichokes!
Thursday, January 27th | Skinnytaste Turkey Meatloaf | Total Time: 1 hour | Meatloaf gets a bad wrap but y’all this one is light and legit. Ava begs me to make this recipe at least once a week!
Friday, January 28th | Simple Salmon Cakes | Total Time: 25 minutes | I never thought of myself as a canned salmon gal but that was before I whipped up these insanely delicious salmon cakes. Crispy and full of fresh herbs, I promise these will become part of your weeknight rotation!
